Gluten Free Green Dragon® Apple Cobbler
Have you ever hear of Green Dragon Apples? One of the very few, seasonal, sweet green apples!

Ingredients
- 3lbs apples, peeled, cored and cut into ½ inch thick slices
- we used Green Dragon Apples
- ½ cup brown sugar
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 1 teaspoon cornstarch
- Juice from ½ lemon
- 1 teaspoon vanilla extract
- 2 Tablespoons plant based cold butter (or regular butter if you don’t want it vegan), cut into cubes
- 2 Tablespoons bourbon (optional)
Cobbler Topping
- 1-1/3 CUP Bob Red Mill Gluten Free Biscuit and Baking Mix *
- 1/3 CUP Granulated Sugar
- 1-1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 CUP Plant-based Butter
- 1Tbs Almond or Oat Milk
*For a non vegan and non gluten free recipe, replace vegan butter with regular butter and gluten free biscuit and baking mix with regular all purpose flour.
Apple Instructions
- Preheat oven to 350°F
- In a large bowl combine apple slices, brown sugar, cinnamon, nutmeg, cloves, cornstarch, lemon juice, vanilla extract and bourbon (if using). Toss until evenly coated
- Spread mixture into a 2-quart baking dish. Place butter cubes over the top of the apples.
- Bake for 20 minutes, place foil over top while making the Cobbler topping.
Cobbler Topping:
- Whisk together the flour, sugar, baking powder, and salt. Add the chilled butter pieces to the flour mixture. Use a pastry blender, fork, or fingers to cut butter into the flour until small, crumbly pieces remain.
- Gently stir in the milk until no flour pockets remain. Pat the dough into flat rounds and place on top of fruit filling. It is fine if fruit is showing through.
- If desired, use a pastry brush to brush milk on top of biscuits and sprinkle with coarse sugar. Bake for 35-40 minutes, or until biscuits start to brown and toothpick inserted in middle comes out clean. Serve warm with ice cream or whipped cream.
- Let cool for 30-60 minutes before serving. Filling will thicken as it cools. Serve slightly warm with ice cream or whipped cream.
