Meyer Lemon Poppyseed Cookies

Lemon poppy seed cookies:  

Makes around 20 cookies  


  • 2 cups Bob’s Red Mill all-purpose flour 
  • 4 tbsp squeezed Melissa’s Produce Meyer lemons  
  • 1 cup coconut oil 
  • 1 tsp baking powder 
  • Pinch of salt 
  • ¾ cup sweetener-I used cane sugar 
  • 1 large egg 
  • 2 tsp vanilla extract 
  • 2 tsp poppy seeds 


  1. Preheat the oven to 350 f  
  1. Mix the coconut oil with the sweetener. Add in the lemon juice, egg, vanilla, and poppy seeds. Add in the dry mixture of flour, baking powder, and salt.  
  1. Fold batter until it’s a cookie texture (add more flour if needed) 
  1. Form into circles and place on a piece of parchment paper  
  1. Bake for 10 minutes until edges are slightly golden  
  1. Cool the cookies 
  1. Spread icing on top  (powdered sugar + lemon juice) and enjoy!
