Guava Lava Cookies


For the cookie :

  • 115 grams or ½ cup unsalted butter
  • 90 grams or ¾ cup powdered sugar
  • 1 egg, at room temperature
  • 1 tsp vanilla extract
  • 190 grams or 11/2 cups all purpose flour
  • Pinch of salt

For the guava filling :


  1. Beat the butter and icing sugar until light and fluffy.
  2. Mix in the vanilla and egg . Beat well.
  3. Add the flour and salt. Beat until dough forms
  4. Cling wrap and refrigerate the dough for 15 to 20 minutes until it’s easier to handle. Meanwhile preheat your oven to 325 F and line a cookie sheet with parchment { or grease with butter ) .
  5. Cut the guava filling into squares of about 1/2 inch .
  6. Make balls of dough about 1 inch in size and flatten. Place one square of guava filling in the center. Pull the dough over the filling from all sides. Smoothen and shape into rounds.
  7. Place the filled dough balls on the prepared pan about 2 inches apart . Bake at 325 F for 25 minutes
  8. Cool on wire rack.
