Meyer Lemon Poppyseed Cookies
Lemon poppy seed cookies:
Makes around 20 cookies
Ingredients:
- 2 cups Bob’s Red Mill all-purpose flour
- 4 tbsp squeezed Melissa’s Produce Meyer lemons
- 1 cup coconut oil
- 1 tsp baking powder
- Pinch of salt
- ¾ cup sweetener-I used cane sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 tsp poppy seeds
Instructions:
- Preheat the oven to 350 f
- Mix the coconut oil with the sweetener. Add in the lemon juice, egg, vanilla, and poppy seeds. Add in the dry mixture of flour, baking powder, and salt.
- Fold batter until it’s a cookie texture (add more flour if needed)
- Form into circles and place on a piece of parchment paper
- Bake for 10 minutes until edges are slightly golden
- Cool the cookies
- Spread icing on top (powdered sugar + lemon juice) and enjoy!
