Guava Lava Cookies
Ingredients
For the cookie :
- 115 grams or ½ cup unsalted butter
- 90 grams or ¾ cup powdered sugar
- 1 egg, at room temperature
- 1 tsp vanilla extract
- 190 grams or 11/2 cups all purpose flour
- Pinch of salt
For the guava filling :
- Melissa’s Guava Paste
Directions
- Beat the butter and icing sugar until light and fluffy.
- Mix in the vanilla and egg . Beat well.
- Add the flour and salt. Beat until dough forms
- Cling wrap and refrigerate the dough for 15 to 20 minutes until it’s easier to handle. Meanwhile preheat your oven to 325 F and line a cookie sheet with parchment { or grease with butter ) .
- Cut the guava filling into squares of about 1/2 inch .
- Make balls of dough about 1 inch in size and flatten. Place one square of guava filling in the center. Pull the dough over the filling from all sides. Smoothen and shape into rounds.
- Place the filled dough balls on the prepared pan about 2 inches apart . Bake at 325 F for 25 minutes
- Cool on wire rack.
